【背景知识---西餐菜谱全览】
点西餐菜对许多人来说都还较陌生,以下是西餐上菜顺序,以供学点西餐菜者参考:

1.
头盘
:
也称为开胃品,一般有冷盘和热头盘之分,常见的品种有
鱼子酱、鹅肝酱、熏鲑鱼、鸡尾杯。奶油鸡酥盒、局蜗牛等。

2. 汤:
大致可分为清汤、奶油汤、蔬菜汤和冷汤等4类。品种有
牛尾清汤、各式奶油汤、海鲜汤、美式蛤蜊汤、意式蔬菜汤、
俄式罗宋汤。法式葱头汤。

3. 副菜:
通常水产类菜肴与蛋类、面包类、酥盒菜肴均称为副菜。
西餐吃鱼类菜肴讲究使用专用的调味汁,品种有鞑靼汁、荷兰
汁、酒店汁、白奶油汁、大主教汁、美国汁和水手鱼汁等。

4. 主菜:
肉、禽类菜肴是主菜。其中最有代表性的是牛肉或牛排,
肉类菜肴配用的调味计主要有西班牙汁、浓烧汁精、蘑菇汁、
白尼丝汁等。禽类菜肴的原料取自鸡。鸭、鹅;禽类菜肴最多
的是鸡,可煮、可炸、可烤、可炯,主要的调味汁有咖喱汁、奶油汁等。

5. 蔬菜类菜肴:
可以安排在肉类菜肴之后,也可以与肉类菜肴同时上桌
,蔬菜类菜肴在西餐中称为沙拉。与主菜同时搭配的沙拉,称
为生蔬菜沙拉,一般用生菜、番茄、黄瓜、芦笋等制作。还有
一类是用鱼、肉、蛋类制作的,一般不加味汁。

6. 甜品:
西餐的甜品是主菜后食用的,可以算作是第六道菜。从真
正意义上讲,它包括所有主菜后的食物,如布丁、冰淇淋、奶
酪、水果等等。

7. 咖啡:
饮咖啡一般要加糖和淡奶油。

【Text】
People become quite illogical when they try to decide what can be
eaten and what cannot be eaten. If you lived in the Mediterranean,
for instance, you would consider octopus a great delicacy. You would
not be able to understand why some people find it repulsive. On the
other hand, your stomach would turn at the idea of frying potatoes in
animal fat----the normally accepted practice in many northern
countries. The sad truth is that most of us have been brought up to
eat certain foods and we stick to them all our lives.
No creature has received more praise and abuse than the common
garden snail. Cooked in wine, snails are a great luxury in various
parts of the world. There are countless people who, ever since their
early years, have learned to associate snails with food. My friend,
Robert, lives in a country where snails are despised. As his flat is in
a large town, he has no garden of his own. For years he has been
asking me to collect snails from my garden and take them to him.
The idea never appealed to me very much, but one day, after a
heavy shower, I happened to be walking in my garden when I
noticed a huge number of snails taking a stroll on some of
my prize plants. Acting on a sudden impulse, I collected several
dozen, put them in a paper bag, and took them to Robert. Robert
was delighted to see me and equally pleased with my little gift. I
left the bag in the hall and Robert and I went into the living room
where we talked for a couple of hours. I had forgotten all about the
snails when Robert suddenly said that I must stay to dinner. Snails would, of course, be the main dish. I did not fancy the idea and I reluctantly followed Robert out of the room. To our dismay, we saw that there were snails everywhere: they had escaped from the paper bag and had taken complete possession of the hall! I have never
been able to look at a snail since then.
