1、羊肉去膻味：将萝卜块和羊肉一起下锅，半小时后取出萝卜块；放几块桔子皮更佳；每公斤羊肉放绿豆5克，煮沸10分钟后，将水和绿豆一起倒出；放半包山楂片；将带壳的核桃两三个洗净打孔放入；１公斤羊肉加咖喱粉10克；１公斤羊肉加剖开的甘蔗200克；１公斤水烧开，加羊肉１公斤、醋50克，煮沸后捞出，再重新加水加调料。

　　2、煮牛肉：为了使牛肉炖得快，炖得烂，加一小撮茶叶(约为泡一壶茶的量，用纱布包好)同煮，肉很快就烂且味道鲜美。

　　3、煮骨头汤时加一小匙醋，可使骨头中的磷、钙溶解于汤中，并可保存汤中的维生素。

　　4、煮牛肉和其他韧、硬肉类以及野味禽类时，加点醋可使其软化。

　　5、煮肉汤或排骨汤时，放入几块新鲜桔皮，不仅味道鲜美，还可减少油腻感。

　　6、煮咸肉：用十几个钻有许多小孔的核桃同煮，可消除臭味

　　7、将绿豆在铁锅中炒10分钟再煮能很快煮烂，但注意不要炒焦

　　8、煮蛋时水里加点醋可防蛋壳裂开，事先加点盐也可

　　9、煮海带时加几滴醋易烂；放几棵波菜也行

　　10、煮火腿之前，将火腿皮上涂些白糖，容易煮烂，味道更鲜美

　　11、煮水饺时，在水里放一颗大葱或在水开后加点盐，再放饺子，饺子味道鲜美不粘连；在和面时，每500克面粉加拌一个鸡蛋，饺子皮挺刮不粘连

　　12、煮水饺时，在锅中加少许食盐，锅开时水也不外溢

　　13、煮面条时加一小汤匙食油，面条不会沾连，并可防止面汤起泡沫、溢出锅外

　　14、煮面条时，在锅中加少许食盐，煮出的面条不易烂糊

　　15、熬粥或煮豆时不要放碱，否则会破坏米、豆中的营养物质

　　16、用开水煮新笋容易熟，且松脆可口；要使笋煮后不缩小，可加几片薄荷叶或盐

　　17、猪肚煮熟后，切成长块，放在碗内加一些鲜汤再蒸一会儿，猪肚便会加厚一倍

　　18、煮猪肚时，千万不能先放盐，等煮熟后吃时再放盐，否则猪肚会缩得象牛筋一样硬

　　19、炖肉时，在锅里加上几块桔皮，可除异味和油腻并增加汤的鲜味

　　20、炖鸡：洗净切块，倒入热油锅内翻炒，待水分炒干时，倒入适量香醋，再迅速翻炒，至鸡块发出劈劈啪啪的爆响声时，立即加热水（没过鸡块），再用旺火烧十分钟，即可放入调料，移小火上再炖20分钟，淋上香油即可出锅；应在汤炖好后，温度降至80～90摄氏度时或食用前加盐。因为鸡肉中含水分较高，炖鸡先加盐，鸡肉在盐水中浸泡，组织细胞内水分向外渗透，蛋白质产生凝固作用，使鸡肉明显收缩变紧，影响营养向汤内溶解，且煮熟后的鸡肉趋向硬、老，口感粗糙。

　　21、炖老鸡：在锅内加二三十颗黄豆同炖，熟得快且味道鲜；或在杀老鸡之前，先灌给鸡一汤匙食醋，然后再杀，用文火煮炖，就会煮得烂熟；或放３～４枚山楂，鸡肉易烂

　　22、老鸡鸭用猛火煮，肉硬不好吃；如果先用凉水和少许食醋泡上２小时，再用微火炖，肉就会变得香嫩可口

　　23、煮老鸭：在锅里放几个田螺容易烂熟

　　24、烧鸭子时，把鸭子尾端两侧的臊豆去掉，味道更美

　　25、烧豆腐时，加少许豆腐乳或汁，味道芳香

　　26、红烧牛肉时，加少许雪里红，肉味鲜美

　　27、做红烧肉前，先用少许硼砂把肉腌一下，烧出来的肉肥而不腻，甘香可口

　　28、油炸食物时，锅里放少许食盐，油不会外溅

　　29、在春卷的拌馅中适量加些面粉，能避免炸制过程中馅内菜汁流出糊锅底的现象

　　30、炸土豆之前，先把切好的土豆片放在水里煮一会儿，使土豆皮的表面形成一层薄薄的胶质层，然后再用油炸

　　31、炸猪排时，在有筋的地方割２～３个切口，炸出来的猪排就不会收缩

　　32、将鸡肉先腌一会儿，封上护膜放入冰箱，待炸时再取出，炸出的鸡肉酥脆可口

　　33、煎荷包蛋时，在蛋黄即将凝固之际浇一点冷开水，会使蛋又黄又嫩

　　34、煎鸡蛋时，在平底锅放足油，油微热时蛋下锅，鸡蛋慢慢变熟，外观美，不粘锅

　　35、煎鸡蛋时，在热油中撒点面粉，蛋会煎得黄亮好看，油也不易溅出锅外

　　36、用羊油炒鸡蛋，味香无异味

　　37、炒鸡蛋时加入少量的砂糖，会使蛋白质变性的凝固温度上升，从而延缓了加热时间，加上砂糖具有保水性，因而可使蛋制品变得膨松柔软

　　38、炒鸡蛋时加入几滴醋，炒出的蛋松软味香

　　39、炒茄子时，在锅里放点醋，炒出的茄子颜色不会变黑

　　40、炒土豆时加醋，可避免烧焦，又可分解土豆中的毒素，并使色、味相宜

　　41、炒豆芽时，先加点黄油，然后再放盐，能去掉豆腥味

　　42、炒波菜时不宜加盖

　　43、炒肉片：肉切成薄片加酱油、黄油、淀粉，打入一个鸡蛋，拌匀，炒散；等肉片变色后，再加佐料稍炒几下，肉片味美、鲜嫩

　　44、炒牛肉丝：切好，用盐、糖、酒、生粉（或鸡蛋）拌一下，加上生油泡腌，30分钟后再炒，鲜嫩可口

　　45、炒肉菜时放盐过早熟得慢，宜在将熟时加盐，在出锅前再加上几滴醋，鲜嫩可口

　　46、肉丝切好后放在小苏打溶液里浸一下再炒，特别疏松可口不论做什么糖醋菜肴，只要按２份糖１份醋的比例调配，便可做到甜酸适度

　　47、炒糖醋鱼、糖醋菜帮等，应先放糖，后放盐，否则食盐的“脱水”作用会促进菜肴中蛋白质凝固而“吃”不进糖分，造成外甜里淡

　　48、做肉饼和肉丸子时，一公斤肉馅放2小匙盐

　　49、做丸子按50克肉10克淀粉的比例调制，成菜软嫩

　　50、做滑炒肉片或辣子肉丁，按50克肉５克淀粉的比例上浆，成菜鲜嫩味美

　　51、做馒头时，如果在发面里揉进一小块猪油，蒸出来的馒头不仅洁白、松软，而且味香

　　52、蒸馒头时掺入少许桔皮丝，可使馒头增加清香

　　53、蒸馒头碱放多了起黄，如在原蒸锅水里加醋２～３汤匙，再蒸10～15分钟可变白

　　54、将少量明矾和食盐放入清水中，把切开的生红薯浸入十几分钟，洗净后蒸煮，可防止或减轻腹胀

　　55、牛奶煮糊了，放点盐，冷却后味道更好

　　56、放有辣椒的菜太辣时或炒辣椒时加点醋，辣味大减

　　57、烹调时，放酱油若错倒了食醋，可撒放少许小苏打，醋味即可消除

　　58、菜太酸，将一只松花蛋捣烂放入

　　59、菜太辣，放一只鸡蛋同炒

　　60、菜太辣，放些醋可减低辣味

　　61、菜太苦，滴入少许白醋

　　62、汤太咸又不宜兑水时，可放几块豆腐或土豆或几片蕃茄到汤中；也可将一把米或面粉用布包起来放入汤中

　　63、汤太腻，将少量紫菜在火上烤一下，然后撒入汤中

　　64、花生米用油炸熟，盛入盘中，趁热撒上少许白酒，稍凉后再撒上少许食盐，放置几天几夜都稣脆如初

　　65、菜籽油有一股异味，可把油烧热后投入适量生姜、蒜、葱、丁香、陈皮同炸片刻，油即可变香

　　66、用菜油炸一次花生米就没有怪味了，炒出的菜肴香味可口，并可做凉拌菜

　　67、炸完食物后的油留下一些残渣并变得混浊，可将白萝卜切成厚圆片，用筷子把萝卜戳几个洞，放入剩油中炸，残渣会附着在萝卜片上，取出清除残渣，再反复放入锅中炸，混浊的油可变清澈

　　68、炒菜时应先把锅烧热，再倒入食油，然后再放菜

　　69、当锅内温度达到最高时加入料酒，易使酒蒸发而去除食物中的腥味

　　70、熬猪油：在电饭褒内放一点水或植物油，然后放入猪板油或肥肉，接通电源后，能自动将油炼好，不溅油，不糊油渣，油质清纯

　　71、泡菜坛中放十几粒花椒或少许麦芽糖，可防止产生白花

　　

今天教大家给肉上浆，拿鸡丁举例，给肉上浆，主要要有盐、胡椒、味精、酱油、干淀粉、鸡蛋和油，如果是需要色泽白净的菜，就不要放酱油，像一些虾，鱿鱼，鸡脯肉只放盐和味精做基础味就可以了，今天我要做浆爆鸡丁，选的是鸡腿肉，为了好吃，加了点酱油

　　上浆的作用：

　　上浆可以使肉类原料更嫩，可以使原料有个基本味，上浆的菜并不都是要滑油的，如果喜欢清淡，也可以用水滑，上浆的肉类比不上浆的熟的更快，在颜色上更可以给人食欲。

　　上浆步骤一

　　入味:

　　有时候我们炒出来的肉总是很硬，没有滋味，就因为是没上奖的原因，首先我们把切好的肉里少放点盐、酱油、味精，胡椒，用手或筷子搅拌均匀，放30分钟左右，记住，一定要加水，水大概是肉重量的五分之一，肉越小，纤维组织破坏面越大，水就要多加一些，比如说，肉丝就要比肉块多加水，家里如果有苏打也少放点，可以使肉多吸收水，调料和水放进去后，搅拌均匀，把肉放在那30分钟左右，让肉有时间去吸收调料和水份，大约30分钟后，你会发现水都没了，哪去了？都被肉吸收了，肉也比刚切好的时候变大了点，做出来能不嫩吗？

给上好味的肉里加鸡蛋，记住，猪肉，牛肉，鸡腿肉加全蛋；鸡脯肉，虾，加蛋清；鱼类加蛋黄。一般一斤肉加一个鸡蛋就够了，也要用手搅拌均匀。

　　步骤二

　　味也入了，蛋也加了，该放干淀粉了，把干淀粉撒进放好鸡蛋的肉里，搅拌均匀，至于放多少呢，开始要一点点加，边加边搅拌，把鸡丁用手抓一把出来，不会手指缝里淌出水就可以了，也不要太干，然后倒点油进去，搅拌均匀，这样肉下锅的时候不会粘在一起，肉放时间长了，也不会风干。

　　看下面就好上好浆的鸡

　　步骤就是入基本味和水，放30 分钟，加蛋，加淀粉，加油

　　我一般都是做很多，然后用袋子装好，放冰箱冻起来，想吃了，用微波炉解冻就好了。

　　下面是鸡脯肉，做水煮鸡片用的，跟鸡丁的区别是不加酱和蛋清

　　上浆是很麻烦，但追求美味的你，还在乎这点时间吗？不吃则以，吃则鸣人，这就是我的原则，一个连吃都嫌麻烦的人，还有什么热情去面对一切呢？

      好久没上博客久没上沪江，回避着辛苦的日子，生活就是让自己过的舒适。考研，学习似乎都已远去，昏昏的过着，忙碌着工作，忙碌着教学，常常上网，但取代学习的早就是娱乐，虽然我还是想，想深造，想让自己生活的更好，想法总是很多的，就看怎么一步步的做，踏踏实实的走了，把工作辞了肯定不可能，这份工作也得来不易，所以还是想趁空闲时间多看看书，多学学习，趁着年轻有激情的时候，拼搏一把，不让以后后悔，今天开始我的考研历程，加油！！

　　俗语说：“工欲善其事，必先利其器”。掌握高度的双语，就是搞好翻译利器的基本条件。有了良好的基本双语条件，就可以开始学习翻译。

　　不过，请别忘记，语言既是翻译必备的利器，当然是越利越好。在学翻译时，双语也应该不断磨练，越磨越利，不断提升。

　　向来，这里的译员待遇差，社会地位也不高，不像采用二十多种多语传译制度的欧洲那样，把会议同步传译，看成是跟律师、医生……等量齐观的专业人士。

　　在翻译方面，也像学语文那样，我向来都是靠自学和自修这四个字。我多年来经常到书店里，找些英华对照的翻译书当案头师父，一有空就经常“拜师”、“学艺”、“练功”。

　　我怎么“学艺（译）”呢？看英华对照的翻译书，一看到好的翻译作品，我会如获至宝，接着“进补”，吸收“好料”，学习好的表达方式，好的翻译方法，好的翻译技巧。必要时，更在书本上做记号，用彩色笔加上五颜六色，甚至在本子上另做笔记，以备日后参考。

　　怎么“练功”呢？华英对照的翻译书，并非都是十全十美的。

　　因此，在华英对照的翻译书里，也会有错译之处。在找到错误和不尽善的地方，就是“练功”的大好场所和难得机会。我可以研究错在哪里，考虑改正或修订，避错就正，加以完善。这样，我才能够从翻译错误中，从进行负面学习，研究翻译技巧，磨练翻译功夫，提升翻译水平。

　　研究华英对照的翻译书，好处可分两方面：一方面可以从善如流，吸收别人的优点，当作是“进补”；另一方面，也可从别人的缺点中吸取教训，当作是“防疫”（防错）。

　　在自修或进修翻译时，还必须量力自作决定，自己是要做哪一类翻译。在我看来，翻译大致可分为三类：一、英译华的单向翻译；二、华译英的单向翻译；三、英华互译的双向翻译。

　　有意做第一类的译者，英文的理解力要强，华文的写作力也得强。有意做第二类的译者，华文的理解力要强，英文的写作力也得强。第三类比较难求，有意做这类比较难的译者，英文和华文的理解力和写作力，都得一样强。

　　在英文词汇里，这种人称为“ambilinguist”（平衡精通双语者），就如“ambidexter”（双手都能善用者）。这种人有能力用英文英语思考，用英文写作和说话，也有能力用华文华语思考，用华文写作和说话。他们是真正、也是难得的华英双语精英。

　　最后，如果问我搞好翻译有何秘诀，由于翻译是语文工作之一，我在这里，献出“十二字诀”，与译界朋友们共勉之——“兴趣、目标、决心、恒心、努力、常练”。

Prerequisites for translation

“To get a job done well, there must be sharp tools first,”so says a folk adage. Mastery of two languages of high standard is the basic prerequisite of the sharp tool to engage in translation. To begin learning translation, one must have a good foundation of the two languages used.

It must not, however, be forgotten that since languages are the required sharp tools for translation, it goes without saying that the sharper the tools, the better they are.

All along, the pay package for translators is poor and their social status is not high either, quite unlike Europe, where over twenty languages are used in its multilingual interpreting system and simultaneous interpreters are regarded as professionals on par with, say, lawyers and doctors.

I have always relied on self-learning and self-study in translation as in languages.

For many years, I frequented bookshops to pick up translation books bilingual in Chinese and English. I regarded them as my "masters" on the desk. Whenever I had the time, I would learn the art from them and practise the skill with them.

How did I learn the art? When I read the bilingual books of translations and came across good pieces, I would feel like I had come across a priceless treasure. Then, like taking tonic, I would absorb the good stuff, learning the good expressions, the good methods and the good translation skills.

Whenever necessary, I would do some marking in the book, using colour pens and even taking down notes in a separate exercise book for future reference.

How did I practise the skill? English-Chinese books of translations are not all perfect.

That being the case, there are bound to be mistakes in bilingual books of translations. Mistakes and imperfections in such books provide good grounds and hard-to-come-by opportunities for skill practising.

These enabled me to study and find out where the translations had gone wrong. They also enabled me to consider the corrections and revisions to avoid mistakes and make improvements. In this way, I was able to learn from the mistakes of others. Through learning by negative examples, I picked up translation techniques, sharpened my translation skill and improved my translation standard.

Through the study of English-Chinese books of translation pieces, I have benefited in two ways.

On the one hand, I could readily learn from good examples and picked up good points of others, taking them in like tonic and nutrition. On the other, I could learn lessons from others' shortcomings, regarding such lessons as anti-mistake vaccines.

In the process of self-study or doing a refresher course in translation, one must, depending on one's interest, decide on the type of translation to take up.

In my view, translators fall into three categories: (1) one-way from English to Chinese (E to C); (2) one-way from Chinese to English (C to E) and (3) two-way between English and Chinese (E<>C).

For those bent on (1), their comprehension of English must be strong and be matched with a strong writing skill in Chinese; on (2), their comprehension of Chinese must be strong and be matched with a strong writing skill in English; on (3) which is harder to come by, they must be equally strong in the comprehension and the writing skill of both English and Chinese.

　　In the English vocabulary, such people are known as "ambilinguists" and are like "ambidexters" who are equally at home in the use of both hands. The ambilinguists are able to think English, write and speak in English. They are also able to think Chinese, write and speak in Chinese. They are the true and rare Chinese-English bilingual elites.

In conclusion, if I am asked whether there is any secret of success for engaging in translation, since translation is one of the types of linguistic work, I can only share with all my translator colleagues the following experience: "Interest, objective, determination, perseverance, effort and practice".

寓意: 无论过去多么辉煌，都难以避免辉煌失去后别人的不敬与报复。

A middle-aged man had two wives. One was old, and the other was young. They both loved him very much.

It was then disclosed in the following manner. Observing his second daughter employed in trimming a hat, he suddenly addressed her with, "I hope Mr. Bingley will like it, Lizzy." "We are not in a way to know what Mr. Bingley likes," said her mother resentfully, "since we are not to visit." "But you forget, mama," said Elizabeth, "that we shall meet him at the assemblies, and that Mrs. Long has promised to introduce him." "I do not believe Mrs. Long will do any such thing. She has two nieces of her own. She is a selfish, hypocritical woman, and I have no opinion of her." "No more have I," said Mr. Bennet; "and I am glad to find that you do not depend on her serving you." Mrs. Bennet deigned not to make any reply; but unable to contain herself, began scolding one of her daughters. "Don't keep coughing so, Kitty, for heaven's sake! Have a little compassion on my nerves. You tear them to pieces." "Kitty has no discretion in her coughs," said her father; "she times them ill." "I do not cough for my own amusement," replied Kitty fretfully. "When is your next ball to be, Lizzy?" "To-morrow fortnight." Athrun and Rey are both extremely good pilots. However, Rey has acted distant whenever Athrun is around

You can't tell Rey's feelings because he dosen't say anything about Athrun but he seems envious of him. Before Athrun arrived Rey was one of the top dogs in the Mobile Suit Squad. Don't get me wrong theres are only a hand full of people I'd have backing me up before Rey. But ever since Athrun arrive Rey seems jealous, maybe he sees Athrun as a traitor for leaving ZAFT or Maybe because he's not in command of the Squad.

Rey is obviously jealous of Athrun because of the following reasons, there are probably more but these are the ones that I currently can think of off the back of my head.

1. Athrun shoots hell better than Rey
2. Athrun gets all the women
3. Athrun has a better mobile suit
4. Athrun is a higher rank
5. Athrun is the center of attention
6. Athrun can make other people shut up like Shin
7. Athrun is respected by everyone
etc.

i think its closer to:

shinn is semi-jealous/just pissed at athrun
Rey is semi-jealous of shinn
Meryinn is jealous of luna
athrun doesn't care about this ridiculousness
and Yzak is at last no longer jealous of athrun.

rey doesn't get jealous, he is the man. but the only thing i noticed that bothered him was after shinn went seed mode for the first time and got all the attention.

I dont think Rey is jealous at all. Ithink the only time Rey ever felt anything threating is when hes fighting Neo and when Shinn went seed and saved the ship. Rey is just doing his own thing, he doesnt have time to be jealous. Or at least thats how he acts. And are you sure he was smiling.
It could also be because he was never able to disapline shinn and athrun did.

I wouldn't be so lenient as to say that. Remember that each of them profess in different styles of sortie. Yzak preferring close range, Athrun preferring medium. The medium range guys always get a higher frag-count than close range guys, but that doesn't really mean they're the further-skilled pilot, now does it? Medium range guys shoot down more of the enemy in question, however close range sortiests always look better on the battlefield due to all the complicated little tricks they pull off with their sabers and what-not. - But you can only kill so many in such an amount of time with that sortie style, where-as medium range sortiests are equipped with the armaments specifically designed to give their user a wider (quite literally) range of victim options.

I'd agree if sorties alone were a factor. I honestly believe, that if you were to look at overall performance (meaning not only broad sorties but also conflict in close quarters, most specifically the one on one bouts with Kira) would suggest Athrun is by far the better pilot. He seemed to have better all around performance and not exclusively as a result of his suit either. Across the board, their was at least a portrayed difference between their skill significant enough to bring Athrun as far as he was carried to the top.

I think the slapping is for not protecting the ship but actually ran into an enemy's base suddenly, They could have lost him if it is not a "new" base and have not much firepower. Futhermore, he disrespect the military code of obeying orders.

Think, if shin were to ran into the EA HQ, what would happen?

1. The HQ would be destroy by shin

2. Shin's impulse would be destroyed, and zaft lost a gundam and pilot. If shin is captured, minvera might have to mount a resuce mission, which mean more trouble.

3. Shin is running low on battery and minvera is out of range. As always the ship will try to rescue the strained ms and shin. which will put everyone in danger. even if shin were to have seed mode, he can do much with a gundam at low power. right?
